Stir-Fry Vegetables & Chicken FT/ Jasmine

Ok so Jasmine is Rice (just incase that one person does not know)
So today for lunch I made a vegetable and chicken stir-fry with rice. 

So I picked up a pack of mixed vegetables containing : Cabbage, Red Cabbage, Broccoli, Kale, Carrots and Snow peas. I also have this stir-fry sauce that I use. The chicken was seasoned with Mrs.Dash original blend. *Mrs.Dash is great... All the seasonings do not have salt and many different flavors to choose from*
I cooked the chicken in olive oil.. ( the chicken can be made however you want)
I put 1 1/2 Tablespoon of the stir-fry sauce and stirred frequently. Then I added the cooked chicken:

Stirred that in and put a little bit more of the sauce on top.


I accompanied the stir-fry with jasmine rice. Some people use noodles and I am going to try that next!!!!  AND I got leftovers for later! POW! Lol

Crab Cakes w/ Remoulade Sauce

So today for lunch I made crab cakes. I took a cooking class last year and we learned how to make Remoulade sauce soooo I was going to make it until I seen this in the supermarket:

Lol, this taste sooo good and not that spicy. That is how I like it! The supermarket I went to had 2 jumbo crab cakes made already. So I took one of the crab cakes 

And made it into mini crab cakes! 


I dust the minis with just a pinch each of flour, cooked them for 3 mins on each side in some oil, and put them on top of my Remoulade sauce! 
Sooo good! I'm going to make them again tomorrow with the last crab cake I have.

Chicken Marsala


So Today I made Chicken Marsala! I love this dish, it's a dish that I would get at Olive Garden(stuffed), and the Cheesecake Factory. The Cheesecake Factory also had Chicken Madeira... I Love them both!! Soo this is how it came out:
The aroma from this dish was superb!!! Some people eat this with pasta but I enjoy and love it with mash potatoes! 
Here is the recipe I found on Foodnetwork.com:

Ingredients
1/2 cup all-purpose flour
1 tablespoon Essence, recipe follows
2 (6 to 8-ounce) boneless, skinless chicken breasts, cut in halves and pounded thin
1 tablespoon olive oil
4 tablespoons butter
3 cups sliced mushrooms (cremini, oyster, shiitake)
3/4 cup Marsala
1 cup chicken stock
Salt and freshly ground black pepper
Chopped chives, for garnish
Directions
1. In a shallow bowl or plate combine the flour and Essence and stir to combine thoroughly. 

2. Quickly dredge the chicken breast halves in the seasoned flour mixture, shaking to remove any excess flour.
3. Heat the oil in a large skillet over medium-high heat until very hot but not smoking. 

4. Add 1 tablespoon of the butter and cook the chicken breasts until golden brown on both sides, about 3 minutes per side. Transfer to a plate and set aside. 
5. Add 1 tablespoon of the remaining butter to the pan and add the mushrooms. Cook, stirring frequently, until mushrooms are golden brown around the edges and have given off their liquid. 
6. Add the Marsala wine and bring to a boil, scraping to remove any browned bits from the bottom of the pan. 
7. When the wine has reduced by half, add the chicken stock(broth) and cook for 3 minutes, or until the sauce has thickened slightly. 
8. Lower the heat to medium and return the chicken breasts to the pan and continue to cook until they are cooked through and the sauce has thickened, about 5 to 6 minutes. 
9. Swirl in the remaining 2 tablespoons of butter, add salt and pepper, to taste. 
10. Garnish with chopped chives and serve immediately.
Essence (Emeril's Creole Seasoning):
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly and store in an airtight jar or container.
Yield: about 2/3 cup
*INFORMATION*:
1. I used 1/2 cup of chicken stock... 1cup takes away the flavor from the Marsala sauce.
2. I did not use the creole seasoning... I seasoned the flour with my own seasonings!

Berry Cheesecake Parfait

Recently I made a berry Cheesecake Parfait with my Roommate! It was very good and definitely something I would make again! 
We bought the cups at Party City for $5, came with 10. 

Recipe: 4 Servings

Ingredients
2 cups mixed berries
1/4 cup + 2 tablespoons sugar
1 tablespoon water
1 (8-oz) package cream cheese, softened
1 tablespoon vanilla extract
1 cup frozen nondairy whipped topping, thawed
1/2 cup graham cracker crumbs 

Steps
  1. Combine 2 cups berries, 2 tablespoons sugar, and 1 tablespoon water. Let rest 12–15 minutes or until sugar has dissolved.
  2. In another bowl; beat cream cheese, 1/4 cup sugar, and vanilla extract with hand mixer until smooth. Fold in whipped topping.
  3. Assemble in 4 tall parfait glasses: starting with cream cheese mixture, graham cracker crumbs, and berry mixture. Repeat.
